Creative Ideas for Thanksgiving Leftovers

Did you buy a turkey that could have fed four times as many people as came over so you’re stuck a refrigerator full of leftovers? If you planned ahead, you packaged up the turkey and sides and sent them home with people so you only ended up with a few more meals worth of turkey dinners. But who says they have to be turkey dinners? Leftover don’t have to be boring.
- Turkey wrap – who says you have to make a standard sandwich. You can wrap using a tortilla (corn or flour) or using a large lettuce leaf. Don’t just stop with iceberg. You can buy large romaine leaves that wrap quite nicely. And look beyond mayonnaise. Do you have any leftover cheese balls from the appetizers?
- Turkey, brie, and apple sandwich – if you have leftover brie, and who doesn’t have an apple hanging around during autumn? You can toast this or use a grill pan and press down to create a pannini. (And if you have a pannini press, it will be even easier.)
Casseroles and Soups
- Cube turkey, and add it to the leftover gravy. Thin down with turkey or chicken stock or broth. Add in vegetables and some rice, and you have a great soup.
- Mix turkey, vegetables, and gravy, and top with leftover mashed potatoes. Bake at 350F for about 30-45 minutes until the top is golden brown and the insides are nicely heated.
- Who says Shepherd’s Pie only can be made with mashed potatoes. Here’s a recipe for using stuffing! (it’s in the sidebar along with a hot and sour soup recipe that can also use leftovers.)
- Turkey casserole – you can use leftover vegetables in place of the frozen broccoli
And if you really have too much, it’s OK to freeze it. The turkey can be thawed and used in the above dishes. It won’t taste as great as it was pre-frozen, but when you mix it up as an enchilada or in a shepherd’s pie, it will taste great.
